The History of Vitamins - What Are Vitamins?

Exactly what is a vitamin anyway? In the late 1800's many poor people came down with a disease called beriberi which manifested itself in anemia and paralysis. There were scientists of the day who thought beriberi was caused by a germ or bacteria, while others insisted that it was a poisoning of some kind.

Then a Dutch physician Christiaan Eijkman discovered that simply substituting unpolished rice for polished rice would prevent beriberi. Unfortunately Christiaan Eijkman was of the opinion that beriberi was an infection of some kind and that something in the unpolished rice resisted that infection. Other scientists insisted that beriberi was the result of some type of systemic poisoning, and that mysteriously the unpolished rice sort of soaked up the poison. But all agreed that there was some kind of major difference between the unpolished rice and the polished rice.

About this same time along came a fellow named Casimir Funk, who working with a British biochemist named Sir Frederick Hopkins discovered something extraordinary. Sir Hopkins did actual experiments in his laboratory by feeding mice very restrictive diets and observing the results. One thing he noticed was that when fed mice a synthetic diet of pure carbohydrate, pure protein, fats and salts the mice would stop growing. However if milk was added to this diet, then the mice continued growing.

The conclusion was that there must be something in the milk that was necessary for mice to grow. Eventually Hopkins was able to isolate what today is known as vitamins A and D.

And then there was an amazing breakthrough in 1911 when a Polish chemist discovered the actual substance in the unpolished rice that prevented the disease beriberi. It was a substance categorized as an amine, a type of nitrogen-containing compound. Casimir Funk realized that this amine was a substance vital to proper body function and thusly named it a "vital amine" or contracted a "vitamin."

Because of their joint experiments, in 1912 Funk and the British biochemist Sir Fredrick Hopkins (one of the founders of modern biochemistry) proposed the Vitamin Hypothesis of Deficiency, theorizing that the absence of a particular vitamin in one's diet could lead to certain diseases.

This theory has proved correct. Over the years it has become apparent that certain substances found in the foods we normally eat are essential and necessary to make our bodies function properly. With out these "vital amines" or vitamins, we experience various diseases. It has been discovered other substances are also essential for health, some of which do not contain nitrogen and are not technically vital "amines". However, the name vitamin is now used for all these essential chemical substances.

Biological chemists and scientists have also determined that minute traces of certain minerals are also essential for optimum health. Today because of the advances of science and technology, we can take vitamin pills, which often also contain these essential minerals. The human body needs these vitamins and minerals to be healthy. But even better than pills is taking the vitamins and minerals in a liquid form because as a liquid the vitamins and minerals are absorbed much more readily into our bodies and can enter our actual cells where they do there ever so important functions.

Next time we are going to examine how these essential vitamins, minerals, and micronutrients affect our bodies.
